Why is 'standard size' an absolute lie in home improvement?

Replacing a basic interior door sounds easy, right? 30 by 80 inches. Simple! Except my house was built in 1985, so the frame is actually 29.75 x 79.2 inches, the hinges are offset by 3/8ths of an inch, and the latch hole is a quarter inch lower. Every 'quick 30-minute fix' requires three trips to the hardware store and four hours of sanding.
